Pasta with courgette and lardons….

Lunch today….had to be quick and tasty as we were freezing on our return from Highclere – and so everyone headed for Alfredo’s whilst I knocked up the following – a favourite quick dish

2 small courgettes  / 2 cloves of garlic / 250gm lardons  / Olive oil / pasta – fusili is good for this dish.

Halve the courgettes then slice each half down the middle. Then dice into little cubes. Chop, the garlic finely. Add a little oil to a frying pan. Pan fry the courgette until beginning to brown. Add the lardons. Cook a few minutes more then add the garlic. (You could also add some dried chilli flakes if you wish at this stage if you like a little bite.) Add a little oregano. After a minute turn down low and just let it all sizzle slowly without burning. Cook the pasta. Take the lardon mix off the heat whilst the pasta is cooking. Once the pasta is ready, drain and return to the pan. Add the lardon mixture and a little more olive oil if you wish. Serve with lashings of God’s cheese – parmesan!Image
